The hand (扌) sorts and pulls the wanted ones — to select. 柬 jiǎn carries the sound exactly and the sense too: 柬 is a tied bundle (束) with marks set among its strands, things being sorted. So 挑揀 picks through, 揀選 chooses, 揀貨 sorts the goods.
